Mind – “Just nail it!” my buddies Homer and Poacher would exclaim as we assembled the duck blind of justice in Mountain Home Idaho. Here is where I was introduced to hunting, ducks, deer, and elk. Homer and Poacher were master sportsman and I am grateful to them for introducing me to the sport, whereas I was an engineer and carpenter. We were able to combine our skills to forward our hunting cause. Homer and Poacher described the type of duck blind they desired, lightweight, portable, roomy, and warm. I went to town and designed a blind of exacting standards.  As we assembled the blind both Homer and Poacher became impatient as I cut pieces to standards and demanded quality. They on the other hand, maybe fueled by a few too many Natural Lights, raged as the project lingered. What we realized is that sometimes good enough is good enough, especially for a structure that was only going to be used for a few years.  With that in mind this week we are focusing on quick workouts, quick meals, and getting the job done. Why? Because I am trying to figure out what we are going to keep doing in the DoD. I know, hit the gym and work on my sequestration stache!

Recipe of the Day 
Seared Asian Steak on Greens

Ingredients
2 Tbsp soy sauce
2 Tbsp rice vinegar
4 1/2 tsp vegetable oil
1 Tbsp ginger
1/2 tsp Asian chili garlic sauce
2 1/8 tsp sesame oil divided
1/4 cup fresh cilantro
24 oz ribeye steak
2 Tbsp toasted sesame
8 oz crimini mushrooms
8 cups mixed greens
Prep
Mix soy, vinegar, oil, ginger, chili garlic sauce, and sesame oil in small bowl.  Add cilantro, stir and blend. Set aside.
Rub 1/4 teaspoon sesame oil over each side of the steaks. Sprinkle with salt and pepper and sesame seeds.  Heat 2 teaspoons of oil in large non-stick skilled over medium heat.  Add mushrooms; sauté until browned, about 8 minutes. Season to taste with salt and pepper.  Tansfer sautéed mushrooms  to plate.  Add 1 teaspoon  sesame oil to skillet; heat over medium high heat. Add steaks; cook to medium rare, 3-4 minutes per side, or as desired. Transfer steaks to cutting board and slice cross grain diagonally in 1/8 inch strips.
Toss mixed greens with dressing in large bowl; divide among plates, top with steak and mushrooms.
Serves 5.
